LOADED BAKED POTATO ADDICTION

If you know me, I like to eat! Most humans do. I have my favorite foods and I have foods that I detest.

Some of my favorite foods are a good juicy steak, Chicken Alfredo, and anything my wife makes for dinner. She will tell you she’s not a good cook and doesn’t like making meals but she is really good at it. She just puts a personal touch on regular foods and it’s good. Whatever she serves, you can count on a good serving of vegetables with the meal. Some staple meals we have in our home on a regular basis are spaghetti, tacos, pork chops, fish, pizza, Roxie makes a great homemade pizza. In the winter time Roxie is always making different kinds of soup and they are awesome.

This is my lunch today.

Lately, we have been on a loaded baked potato craze! It all started a couple months ago when our church had an evening worship service with a dinner to follow. The dinner was a simple loaded baked potato. That was it. There were many different toppings to put on your potato. It was so good that after that I think we’ve had that meal once a week at home. We try different toppings once in a while. My favorite is the crushed onion rings that you put on a green bean casserole. We also add bacon bits, the fake kind, but at the church meal my friend Harlow Anderson chopped up real crispy bacon and that made a big difference. You can never go wrong when you add bacon to food. I like to top my potato with shredded cheese, bacon bits, onions, diced ham, sour cream and then load it up with a good heaping of vegetables. Lots of vegetables! We get the frozen mixed vegetables in a bag that you can cook in the microwave. I like to add some seasoning to it, like lots of pepper or Lowry Salt.

We went with some friends to The Rock supper club in Granite Falls and I was happy to see on their menu as a side a loaded bake potato. Guess what I had as a side? That’s right a loaded bake potato with my steak and ribs. It tasted so good. So that is what I am craving lately. I think I will have one this afternoon for lunch.
