Breakfast: My Favorite Way to Start the Day
They say breakfast is the most important meal of the day, but I’d go a step further: it’s my absolute favorite. While I have friends and family who skip it entirely—and I’ve even done the same occasionally while fasting—I usually prefer to lean into my daily morning routine.

I have four go-to breakfast meals that I rotate. Here is how I kick off my mornings:
1. The “Perfect” Omelet
I’m going to brag for a second: I make the best omelets. They are made to perfection! Just ask my wife; she’s my biggest fan.
I start with farm-fresh organic eggs from a friend. I keep the filling simple: cheese and either bacon bits or diced sausage. Usually, it’s a two-egg omelet, though I’ll go for three if I’m extra hungry. Here’s my process:
- The Prep: I whisk the eggs with a splash of milk until they’re well-combined.
- The Pan: I heat some MCT oil in a skillet, making sure it’s nice and hot before the eggs hit the pan.
- The Cook: Once they’re in, I sprinkle on some pepper and leave it alone.
- The Flip: Just before I’m ready to fold it, I add the meat and cheese. I carefully flip one half over the other, let it set for a moment, and slide it onto the plate.
I love topping it with plenty of mild salsa and serving it with strawberries, blueberries, and the occasional piece of toast. It is, quite simply, the perfect breakfast.
2. Yogurt and Honey
Option two is plain yogurt topped with honey, cinnamon, and blueberries. It’s quick, easy, and delicious. I’m a huge fan of honey—I actually squeeze it onto a lot of my food—and I make sure to use organic honey sourced directly from a farm.
3. The Minimalist
My third option is just a banana with my coffee. It’s simple, light, and a great way to keep the calories down when I’m looking for something quick. Coffee is a must for me in the morning.
4. Rice Chex
The fourth choice is Rice Chex topped with honey, blueberries, and a sprinkle of cinnamon. Every once in a while, I’ll swap the cereal for a slice of sourdough bread topped with peanut butter.
A Note on Fasting
Sometimes on Mondays, I’ll do a 24-hour fast for health reasons. I’ll stop eating at 6:00 PM on Sunday and won’t break the fast until 6:00 PM on Monday, sticking strictly to water and coffee in between.
It isn’t nearly as hard as it sounds; in fact, it feels empowering. A holistic doctor suggested this to me, and the benefits for my mental and physical health have been incredible.

Whether it’s a fasting day or a “perfect omelet” day, I truly value my morning routine. Sitting in my favorite chair reading my Bible and doing my devotions, then having my breakfast! Mornings don’t get better than that. But let’s be honest: nothing beats a good egg omelet!
